Did you know that these peanut topped cookies actually are a sweet legacy of Chinese immigration in Dutch harbour cities such as Amsterdam and Rotterdam in the 30-ties? Unemployed Chinese seamen took to selling peanut cookies.
For several years the Old Mill Peanut Cookies are baked according to the authentic recipe. Before baking the cookies the dough is laid to rest in order to improve its texture and quality.
Another reason why our peanut cookies are so brittle and airy is that our dough is gently sliced in rounds on the baking plate (instead of moulded by heavy rollers, which would push all the air out of the dough).
